As far as I know these were all aftermarket jobs. But one of the big car magazines published a contemporary article about one (R&T maybe?) and that may have helped push more into existence than just one or two.

I just found the Jalopnik series on the yellow Straman. I’m not sure if this was a garage hack job or a legit conversion but it looked well done. Just a brain twist compared to what a CRX “should” look like.

Agreed. Between the VW Cabrio, Suzuki Swift, Mini Cooper and Fiat 500 there's a surprisingly large amount of square back hatches that have been factory convertible-ified, so it wouldn't be too much of a stretch. But the roof shape is pretty much what defines CRX to me.
